Blue Gold - 6in (150mm) Petty Culinary Knife Stainless Steel

“Blue Gold” 6 inch (150mm) petty blade knife. There are few color combinations that gel together as beautifully and effortlessly as blue and gold. Interwoven throughout a column of gold leaf flake along the length of this knife handle is a smattering of rich blue resin. Royal blue surrounded and complemented by gold. Includes the sleek walnut saya shown.⁠

The blade is made from molybdenum vanadium [stainless] steel, which is a mid-grade stainless steel hardened to HRC 57. Nothing fancy, but gets the job done, won’t rust, and easy to sharpen. You won't have to baby this knife. The edge angle is sharpened to 15 degrees and stropped for a razor sharp edge. Full flat grind (tapers from spine to cutting edge). The blade is 6” (150 mm) long, 1.122” (29.5 mm) tall, & 0.073” (1.85 mm) thick at the spine with a distal taper (gets thinner as it goes to the tip). The total length of the knife is 10.7” (272 mm).
